This recipe comes from a friend of mine at work. She is an amazing cook. I just love when she experiments on me! Package size on the coleslaw is an estimate...whatever the normal package size is. You can use or not use whatever veggies you like. My family is not a fan of bell peppers so I sometimes leave those out. Cook time = chilling time. Mary says she likes to make grilled cheese with some beer bread, some of this and some good cheddar cheese inside....mmmm mmm
Ingredients:
1 (4 ounce) package coleslaw mix, with carrots
1 medium red bell pepper, chopped
1/4 cup green onion, sliced
1/2 cup celery, chopped
1/4 cup dried cranberries
sliced almonds
1/2-2/3 cup mayonnaise
3 tablespoons sweet pickle relish
3 tablespoons honey
salt and pepper
Directions:
1. Mix all the ingredients together and chill for at least 2 hours.
