My brother got this recipe from his best friend's mother when he was a teenager, passed it on to me when I was in my 20s, and it has been a favourite ever since. Even my kids like it, if I omit the peppers.
Ingredients:
3 slices bacon, chopped
1/4 cup chopped onion
3/4 cup green pepper, chopped (optional)
1 garlic clove, minced
3 1/2 cups chopped tomatoes
1 cup chicken broth
1/2 cup white wine (optional)
1/2 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon thyme
1/2 teaspoon paprika
1/2 teaspoon tabasco sauce
1/2 teaspoon marjoram
2 cups meat (eg shrimp, chicken, ham, sausage etc) or 2 cups seafood (eg shrimp, chicken, ham, sausage etc)
1 cup uncooked rice
Directions:
1. saute bacon, onions, peppers and garlic until tender. Add tomatoes. Add chicken broth, wine and seasonings. Bring to a boil and add rice. Reduce to a simmer - stirring occasionally and checking the liquid level, adjusting if necessary. When rice is cooked, add meat and/or seafood and heat through quickly.
