Healthy, tangy and full of beans. This fast and easy salad is a breeze to make. Add cooked shrimp or chicken for a full meal, a jalapeno pepper for zing, or just enjoy the clean, fresh flavors. Perfect with grilled foods but hearty enough to stand on its own.
Ingredients:
1 (15 ounce) can black beans, drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 green bell pepper, diced
1 large red onion, diced
1 bunch cilantro, chopped
1 stalk celery, diced
2 tablespoons italian-style salad dressing
1 lemon, juiced
salt and ground black pepper to taste
Directions:
1. Mix black beans, kidney beans, garbanzo beans, green bell pepper, red onion, cilantro, and celery in a large bowl. Add Italian dressing, lemon juice, salt, and pepper; toss to coat. Let stand about 5 minutes for flavors to blend. Chill if desired.
