Ingredients:
2 tablespoon(s) butter, divided use
2 cup(s) chicken stock
1 sprig(s) fresh thyme
freshly cracked black pepper to taste
1 clove(s) garlic
kosher salt to taste
6 ounce(s) marsala wine (3/4 cup)
2 shallots
Directions:
1. Roughly chop garlic and slice shallots. Saute in small amount (less than 1 tablespoon) of butter with the thyme. Deglaze with Marsala and reduce to a syrupy consistency. Add stock and simmer to reduce by half, or to desired thickness. Season with salt and pepper. Strain and return to pan. Whisk in remaining butter.
