This came about when we were just about out of everything good and the Market Day order was coming in the next day, which means clearing out the freezer. For those who don't have Market Day, it is a fundraiser whereby you buy (mostly) frozen foods, some in bulk, thru your school, church, etc. and they receive 10% or more from your purchase. Some things are soooo much better than supermarket items. Anyway.....this is how I threw together a meal for the Fam on the quick and cheap, and also made room for the good stuff . I need to post it, because none of my hungry little birds knows this was just a way to use stuff up, and now they want it all the time. Perhaps from scratch would be healthier, but it's for sure better than drive-thru!
Ingredients:
6 pre-cooked hamburger patties
1 (16 ounce) bag frozen mixed vegetables
1 small onion, diced
2 cups gravy (brown or beef, prepared from packet, leftovers, whathaveyou)
2 roma tomatoes, chopped
3 -4 cups tater tots (i used crowns, enough to cover casserole)
8 ounces shredded cheddar cheese
Directions:
1. Preheat oven to 350 degrees.
2. Spray a 9x12 pan with cooking spray; place hamburger patties evenly in the bottom, and cover with mixed vegetables.
3. Prepare gravy as directed on package, if using, or reheat leftover/jarred gravy to get a pouring consistency.
4. Add Roma tomatoes to gravy. At this point you may add any spices/herbs you like - my family especially likes basil in things, and parsley and pepper are always good.
5. Pour this to cover the hamburger patties and veggies completely.
6. Cover with Tater Tot Crowns (Crowns get really nice and crunchy!).
7. Sprinkle with shredded cheddar, and cover with aluminum foil.
8. Bake at 350 degrees for 30 minutes.
9. Remove foil and continue to bake at 400 degrees for 10-15 minutes to get the Taters and cheese crispy.
10. Serve with a salad if you like, but really, it's pretty much all in here!
