I have to give props to my sister-in-law, Marj, for this recipe! She makes THE best melt-in-your-mouth, fall-off-the-bone chicken legs and wings (any pieces can be used) – it’s a favorite in our house. It’s so easy to put together, and the end result is so flavorful. Read more . I've used it as a main course, or as appetizers at parties. I make it in foil pans so the clean up is a snap. The key is in the slow baking and coating the pieces generously with the Parmesan cheese the last hour or so!
Ingredients:
as many chicken legs as you need for the amount of servings needed
as many chicken wing pieces as you need for serving (if the wings are whole, i suggest you cut off the tips and cut the remaining pieces at the joint to leave the wing tips and wing “drummies” separate)
1 bottle of any zesty style italian salad dressing – we often use kraft, but any brand will dothe fat-free dressings won’t have the needed oil for this so i don’t know how that would work
plenty of parmesan cheese (the finely grated variety)
some garlic salt, if desired
Directions:
1. Place chicken pieces in a baking dish that will hold them all in a single layer.
2. Drizzle the salad dressing over the chicken, coating it well but not swimming in it.
3. Bake for 45 minutes at 275 degrees.
4. Turn pieces and bake for another 45 minutes at 275 degrees.
5. Turn pieces again and increase oven heat to 325 degrees; generously sprinkle pieces with Parmesan cheese and bake for 30 minutes.
6. Turn pieces and sprinkle again with the Parmesan; bake another 30 minutes.
7. Continue to repeat this until the chicken is nicely browned.
8. Sprinkle with some garlic salt just before serving, if desired.
9. Serve with lots of napkins and cold beer!
