This is a very tasty pie. A neighbor made this a few years back and it was my first introduction to marionberries. Yummy.
Ingredients:
1 baked pie shell
5 cups frozen marionberries divided
4 tablespoons cornstarch
1 cup granulated sugar
2 tablespoons lemon juice
Directions:
1. Crush 2-1/2 cups of the berries with a fork or pastry blender.
2. Stir in cornstarch, sugar and lemon juice.
3. Return remaining berries to freezer.
4. Cook berry cornstarch mixture over medium high heat.
5. Stir constantly until mixture is clear and thick about 6 minutes.
6. Remove from heat and cool mixture completely in refrigerator.
7. Stir occasionally.
8. Remove remaining berries from freezer.
9. Gently fold into cooked, cooled berries.
10. Turn into crust then refrigerate until well chilled.
