Another yummy looking lunch recipe from The Healthy Lunchbox.
Ingredients:
4 cups raw vegetables (onions, bell peppers, zucchini, parsnips, cucumbers, carrots, etc.)
1/4 cup balsamic vinegar
1 tablespoon olive oil
salt and pepper
Directions:
1. Slice all vegetables thinly (food processor!). 2. Toss with oil, vinegar and seasonings. 3. Cover and marinate in the fridge several hours or overnight.
