Marinated Tomatoes

For a variation add sliced Bermuda onion and fresh mushrooms to tomatoes
Ingredients:
2-3 large ripe tomatoes
1/2 cup extra virgin olive oil
2 tbsp cider vinegar
1 tsp basil
1 tsp oregano
1 tsp cilantro
1 tbsp flat leaf parsley (finely chopped)
1 clove minced garlic
1 tbsp finely chopped onion
1 tsp salt
6 turns of pepper mill
Directions:
1. Wash tomatoes, pat dry. Chop tomatoes into pieces place in a bowl.
2. Add remaining ingredients to bowl and mix.
3. Refrigrate at least 1 hour. Garnish with Parsley.
