Marinated Stuffed Shrimp

This is an older Southern Living recipe that I made for my husband's birthday dinner last year. I served the shrimp with broiled lobster tails, twice baked potatoes and yeast rolls. The recipe is a little time-consuming, but absolutely worth the effort. Prep time includes peeling/deveining the shrimp and the chill time.
Ingredients:
1 lb fresh jumbo shrimp
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
3 1/2 ounces smoked gouda cheese, cut in 1 inch cubes
4 ounces prosciutto, thinly sliced in strips
1/2 cup olive oil
1/4 cup white balsamic vinegar
2 tablespoons chopped rosemary
1/8 teaspoon red pepper
Directions:
1. Peel the shrimp, leaving the tail intact.
2. Devein the shrimp and butterfly with a sharp knife.
3. Heat 2 T oil in a skillet over medium high heat.
4. Add the shrimp, garlic, salt and pepper to the hot oil and saute for 3 min or until the shrimp turns pink.
5. Remove from heat and cool.
6. While the shrimp cools, wrap a prosciutto strip around each cheese cube.
7. After the shrimp has cooled, insert a prosciutto/cheese cube in each shrimp and secure each with a toothpick.
8. Cover and chill 10 minutes.
9. Whisk together 1/2 c oil, vinegar, rosemary and red pepper.
10. Add the shrimp to the marinade.
11. Toss so the shrimp are covered with the marinade.
12. Cover and chill 10 minutes.
13. Remove shrimp from marinade and serve.
14. Discard the marinade.
