Marinated Shrimp And Vegetable Medley

This is a wonderful combination of parboiled veggies and cooked shrimp marinated in a very light marinade. Serve with toothpicks. Keeps for one week.
Ingredients:
2 cups cauliflower - small pieces
2 lg. carrots
1 1/2 lb cooked fresh shrimp - peeled and deveined
1 green pepper cut in 1 inch pieces
1 lb mushrooms, trim stem
4-6 green onions, cut in 1 inch pieces
dressing: 1/4 cup lemon juice
1/3 cup cider vinegar
2 tsp dijon mustard
2 tsp sugar
1 tsp salt
1/8 cayenne pepper
2 tsp finely chopped parsley
1/2 cup olive oil
about 15 black pitted olives
Directions:
1. Parboil cauliflower and carrots in boiling salted water for 5 minutes, drain well and combine with shrimp, green pepper, mushrooms, black olives and onions
2. Combine lemon juice, vinegar, mustard, sugar, salt, cayenne, parsley and oil in a jar with a lid.
3. Pour dressing over the veggie mixture and toss.
4. Cover and refrigerate for several hrs.
5. To serve, lift out of the marinade and arrange and serve with toothpicks.
