Marinated Potato Salad

Ingredients:
3 lbs potatoes
1/2 cup diced carrot
1 1/2 cups green peppers, sliced thin
6 scallions, sliced
3/4 cup peas
1/4 cup minced parsley
1 teaspoon salt
2/3 cup olive oil
2/3 cup cider vinegar
1/2 teaspoon dried dill
Directions:
1. Wash potatoes well. Cover them with water in a pot and bring to a boil (don’t cut or peel the potatoes).
2. When just tender, drain and rinse with cold water.
3. Cut into small cubes when cool enough to handle.
4. Put potatoes into a medium bowl and add the rest of the ingredients.
5. Stir well, chill at least one hour before serving.
