Marinated Peppers and Mozzarella

Ingredients:
4 cups baby sweet peppers
1/2 cup extra-virgin olive oil
3 garlic cloves, crushed
1 teaspoon grated lemon rind
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
3 ounces baby mozzarella cheese (balls)
1/4 cup fresh small basil leaves
1 teaspoon fresh lemon juice
Directions:
1. Preheat broiler to high.
2. Arrange the baby peppers in a single layer on a foil-lined jelly roll pan, and broil peppers for 4 minutes on each side or until blackened and tender.
3. Cool, Combine peppers, olive oil, garlic cloves, lemon rind, red pepper, salt,and mozzarella balls, and toss.
4. Cover, and refrigerate overnight, tossing after 6 hours.
5. Let stand at room temperature for 30 minutes.
6. Stir in basil leaves, and lemon juice before serving.
7. Serve with a slotted spoon.
