Marinated Peppers

I made them up yesterday. They are delicious. Serve with toasted bread.
Ingredients:
1 ea. red,green and yellow bell pepper
1-1/2 cloves garlic(i used 2)sliced
1 tb balsamic vinegar
1/4 c extra virgin olive oil
1/2 tsp chopped fresh basil
1/2 tsp chopped fresh parsley
salt and pepper to taste
Directions:
1. Preheat oven to 450' Place whole peppers in oven directly on rack. Roast about 15 mins,turning if needed,until the skin is well scorched. Immediately place in bowl covered with plastic wrap or in paper bag,and allow to cool.
2. Remove skins from pepppers by rubbing with your hands,and rinse under cold water. Cut in half,remove seeds and stems,then cut in strips.
3. Place peppers into med. serving bowl,and stir in garlic,vinegar,oil,basil,parsley,salt and pepper.
