A great beginning, middle or end to any African Meal.
Ingredients:
1 teaspoon whole cumin seed
1 tablespoon cracked coriander seed
1 tablespoon red pepper flakes
2 tablespoons mint, freshly chopped
1 lemon, zest of
1 lemon, juice of
1/2 teaspoon black peppercorns
1 lb east african variety olive
Directions:
1. combine everything in a glass jar.
2. add the olives and toss to coat.
3. refrigerate for 3 days.
4. lasts for 3 weeks in the refrigerator.
