Marinated Mushrooms

Ingredients:
2 lbs fresh mushrooms
2 garlic cloves
1 cup red wine vinegar
1 cup water
1/2 cup olive oil
1/2 cup vegetable oil
1 bay leaf
1 teaspoon salt
1/2 teaspoon dried thyme
12 whole black peppercorns
fresh parsley
Directions:
1. Clean mushrooms and set aside. Flatten garlic and remove peel.
2. Combine all ingredients, except mushrooms and parsley in a dutch oven. Bring to a boil, then reduce heat and simmer 5 minutes. Add mushrroms and simmer uncovered for 10 minutes.
3. Remove from heat and let stand until slightly cool. Transfer mushrooms and marinade to a storage container. Cover and refrigerate until ready to serve.
4. Before serving, remove mushrooms from marinade and place in serving dish. GArnish with fresh parsley.
