Marinated Kohlrabi And Carrots

Very nice change of paste with this delight. I got this from an estate sale and absolutely love it.
Ingredients:
6 small kohlrabi peeled and cut into matchsticks
3 medium carrots peeled and cut into matchsticks
1/2 cup olive oil
2 tablespoons fresh lemon juice
2 tablespoons sherry vinegar
1 teaspoon sugar
1 tablespoon capers rinsed and drained
1/2 teaspoon dried thyme
salt and pepper
Directions:
1. Cook kohlrabi and carrot in boiling water for 2 minutes.
2. Drain well and place in a jar or bowl.
3. Whisk together remaining ingredients then pour over vegetables and cover.
4. Refrigerate 48 hours stirring vegetables occasionally.
5. Drain some of the marinade before serving.
