Use different varieties of tomato for more color. Prepare just before serving so the tomatoes will hold their shape.
Ingredients:
1 tablespoon chopped fresh dill
2 tablespoons dijon mustard
2 teaspoons grated lemon rind
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 pounds large heirloom tomatoes, cut into 1/4-inch-thick slices
Directions:
1. Combine the first 6 ingredients in a large bowl. Add tomato slices, tossing gently to coat. Let stand 15 minutes.
