Marinated Greek Salad

Made this up one night. I've used fresh or canned petite diced tomatoes in a pinch. Great with rice, especially if you cook the rice in chicken stock. Enjoy!
Ingredients:
4 roma tomatoes, finely diced
1 cucumber, finely diced
1 bell pepper, finely diced
1 vidalia onions or 1 red onion, finely diced
16 ounces cannellini beans, rinsed & drained
1/3 cup feta cheese, crumbled
1/4 cup extra virgin olive oil
1/2 cup red wine vinegar
1 teaspoon white vinegar
1 tablespoon minced fresh basil
1 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Chop all veggies & place in a large bowl; add rinsed canellini beans. In a small bowl mix dressing ingredients. Pour dressing over salad and mix lightly. Sprinkle with feta cheese. Serve immediately or cover & refrigerate to allow flavors to blend more.
