These are great for an antipasto platter, in salads or just for snackin'. Everyone who tries these asks for the recipe...They are delicious! Enjoy!
Ingredients:
1-15oz. can garbanzo beans, undrained
2-3 cloves of garlic, minced
1/2 teaspoon dried rosemary, crushed
1 cup water
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon dried parsley
1/2 teaspoon (or to taste) crushed red pepper flakes, optional
Directions:
1. In a saucepan, combine undrained beans, garlic, rosemary and water.
2. Bring to a boil.
3. Reduce heat and simmer, covered, for 15 minutes; drain.
4. In a bowl, combine olive oil, vinegar, salt, pepper, parsley and pepper flakes (if using).
5. Whisk until combined.
6. Pour beans in bowl and toss to coat.
7. Cover and refrigerate overnight, stirring occasionally.
8. Serve and enjoy!
