Marinated Feta Cheese With Olive And Capers

Great start for dinner party, or side dish with a tomato soup or pasta. From Appetizers, Finger Foods, Buffets and Parties. Marinates for 2 weeks!
Ingredients:
12 oz feta cheese, cubed
2 garlic cloves
1/2 t mixed peppercorns
8 coriander seeds
1 bay leaf
2 t drained capers
1/2 c drained kalamata olives (or your favorite olive)
fresh oregano or thyme sprigs
olive oil to cover
jar
toasted french bread and chopped tomatoes at serving
Directions:
1. Cubed cheese
2. Thickly slice garlic
3. Lightly crush peppercorns and coriander seeds
4. Pack feta cheese into a large perserving jar with the bayleaf - interspersing with garlic, coriander/peppercorns, capers, olives, and thyme or oregano sprigs
5. Pour in enough olive oil to cover cheese
6. Close tightly and allow to marinate for 2 weeks
7. TO Serve: Lift out cheese/olives/etc and palce on hot toast, garnish with chopped tomatoes and drizzle some of the flavored oil marinade over all.
