Marinated Cucumbers And Tomatoes

A delicious, healthy summer snack or side dish!
Ingredients:
1 cucumber, sliced or cut up
handful of grape or cherry tomatoes, halved
1/4 or less of a small red onion, sliced (optional)
approx 1/4 - 1/3 cup red wine vinegar
approx 1/4 cup or less of vegetable or canola oil
pinch of kosher salt to taste
pinch of pepper to taste
dash of honey (approx 2 tsps)
Directions:
1. Combine cucumbers through onion in a bowl.
2. Whisk together vinegar through honey.
3. Add dressing to veggies and combine.
4. Keep refrigerated.
5. All measurements are approximate....I don't measure them...just taste and add!
