Marinated Chicken Fajitas (Vegetarian Friendly)

Living in a split household (I'm vegetarian and my husband eats meat), I'm always trying to find/create/adapt recipes where we can both have the same meal. Here's one of our favorites. I usually serve this with a Mexican or Spanish rice. (I'm the type of cook the eyeballs things, so the spice measurements are a complete guess.)
Ingredients:
1 boneless skinless chicken breast
2 quorn naked chik'n cutlets
1 cup italian dressing, divided
4 -6 flour tortillas
1 bell pepper, sliced
1 yellow onion, sliced
1 -2 garlic clove, minced
1/2-1 tablespoon chili powder
1 teaspoon cumin
1/4 teaspoon red pepper flakes (optional)
1 tablespoon olive oil
1 pinch salt (to taste)
1 pinch pepper (to taste)
3 ounces shredded cheddar cheese (optional)
Directions:
1. Marinate chicken breast in 1/2 cup Italian dressing overnight. AND/OR Marinate Quorn cutlets in 1/2 cup Italian dressing for 3 hours. Discard marinade.
2. Grill chicken breast and/or Quorn cutlets. Slice into strips.
3. Saute bell pepper, garlic and onion in olive oil until soft. Season with chili powder, cumin, red pepper flake, salt and pepper.
4. To Assemble: Sprinkle cheddar cheese down the center of each tortilla. Top with sliced chicken pieces and pepper mixture. Roll or fold and enjoy!
