Marinated Cheese

This is a recipe that I use when I cater special events. I was given the orginal recipe by my neice and I since have made some changes. I am posting here for safe keeping and thought I could share with all the Zaar Family
Ingredients:
1/2 cup olive oil
1/2 cup white balsamic vinegar
3 tablespoons chopped parsley
2 tablespoons coarse grain mustard
3 tablespoons pesto sauce
1/2 teaspoon black pepper
1 tablespoon minced garlic
1 (2 ounce) jar diced pimentos, drained
1 (8 ounce) package sharp cheddar cheese
8 ounces cream cheese
Directions:
1. Combine first eight ingredients in a bowl and blend together well to create a marinade.
2. Slice cheddar block in 1/8 inch slices.
3. Slice cream cheese block in 1/8 inch slices.
4. Place cheeses in shallow baking dishes alternating cheddar and cream cheese slices.
5. Pour marinade over cheese.
6. Cover and marinate at least 24 hours.
7. Serve by transferring sliced cheese on to platter.
8. Pour marinade over top.
9. Cooking time is marinating time.
10. Garnish.
