Ingredients:
2 cups green beans cut into 1-inch lengths
15 oz lima beans, drained and rinsed
15 oz kidney beans, drained and rinsed
2 tbs minced onion
3 cloves garlic, pressed
1 large ripe fresh tomato, chopped
2 tbs chopped fresh basil
1 tbs chopped fresh oregano
1 tbs chopped fresh parsley
3 tbs fresh lemon juice
2 tbs extra virgin olive oil
1 salt and pepper
Directions:
1. Mince onion and press garlic and let sit for 5 minutes.
2. Fill the bottom of a steamer with 2 inches of water and add green beans; steam for 5 minutes.
3. Drain and rinse canned beans, being certain to remove excess moisture.
4. Mix all ingredients together and marinate for 15 minutes or longer, if possible.
