I love seasoned artichoke hearts and could never find the right tangy flavor in jars, so I came up with this very simple marinade. The hearts are good on a toothpick as an appetizer, on subway sandwiches, and baked in crescent dough with cream cheese. I keep them in the fridge all the time.
Ingredients:
3 (16 ounce) cans artichoke hearts, drained
1 ounce good seasons italian dressing
1/4 cup red wine vinegar
1/2 cup olive oil
1/4 water
Directions:
1. Drain the artichokes and put them into a glass jar or bowl.
2. Mix the Good seasons seasoning with the water and vinegar, then stir in the Olive oil. You may want to add more Vinegar.
3. Pour over artichokes and store in refrigerator. Turn jar occasionally to make sure all the artichokes get some marinating time.
4. Options: Sometimes I add lemon zest to an extra tang. Oh, and I sometimes throw in pepperoncinis and several different kinds of olives to the mix.
