I found this recipe in a cookbook that I bought at work. A group of employees submitted a fave recipe and they sold the cookbook for a charity. This person wanted to remain anonymous.
Ingredients:
1 large garlic clove
1 large onion
olive oil
3 cans tuttarosa crushed tomatoes
1 tablespoon salt
1 tablespoon sugar
1 teaspoon oregano
1 teaspoon basil
1 teaspoon parsley
1/2 teaspoon pepper
Directions:
1. In a frying pan, saute garlic and onion in olive oil. As the onion and garlic become saturated, add salt, sugar, oregano, basil, parsley and pepper. Continue to saute until slightly brown.
2. Empty 3 cans tomatoes in a large pot. Add 1/2 can water for each can of tomatoes. Drain sauteed garlic and onion mixture and add to sauce. Simmer uncovered for 30-40 minutes.
3. By adding flavorings to the garlic and onion while frying you are locking in the flavor! That is the secret. Enjoy.
