Marinaded Vegetable Quinoa Salad

Fresh and zesty. Good summertime snack
Ingredients:
2 c. quinoa
2c vegetable stock
2c water
1 zucchini, large dice
8 large white mushrooms, halved
2 cloves minced garlic
125 ml olive oil
4 tb fresh lemon juice
6 tb white balsamic vinegar
1 tb honey
8 tb fresh chopped herbs, parsley and or basil
Directions:
1. Put quinoa, water and vegetable stock in pot, bring to a boil, salt water, cover and reduce heat to low. Quinoa shoudl be done in 15 mins. Remove from pot and chill in cooler
2. Combine garlic,lemon juice and balsamic, while whisking add olive oil in a slow steady stream. when all in in and emulsified and honey salt and pepper. In a steel bowl toss the diced zucchini and mushrooms with the marinade. add herbs. chill for 30 mins or overnight. add quinoa, toss and serve!
