Moist and delicious!Nothing really fancy about this recipe, except it's great comfort side dish. I've accumulated serveral recipes and have combined them to make this. Many variations
Ingredients:
1/2 cup raisins (jumbo ones can be purchased from a health food store)
1/2 cup frozen apple juice concentrate, thawed
1/2 cup butter
2 medium onions, chopped
2 minced garlic cloves (buy garlic already minced)
1 (16 ounce) package pork sausage
2 large granny smith apples, chopped
3 celery ribs, chopped
1 (8 ounce) package stuffing croutons
3 cups chicken broth
2 large eggs, lightly beaten
1/2 cup chopped fresh parsley
1 tablespoon chopped sage
1 teaspoon chopped thyme
1/4 teaspoon chopped clove
1 teaspoon salt
1 teaspoon pepper
1 cup chopped pecans (optional)
1 (12 ounce) can ocean spray jellied cranberry sauce (optional)
1 cup chopped cranberries (optional)
Directions:
1. Combine raisins and apple juice, let stand for 2 hours.
2. Melt butter in a large skillet over medium heat; add onion and garlic and saute 5 minutes or until tender. Add sausage, and cook, stirring until it crumbles and is no longer pink; drain. Stir in apples and celery and cook, stirring occasionally (for about 10 minutes). Transfer mixture to a large bowl. Stir in raisin mixture, croutons, and remaining ingredients until moistened. Spoon into lightly greased 13X9 baking dish. Bake covered at 350 degrees.
