Very low calorie-Great for filling up or getting vegetables in. Makes 10 1 cup servings
Ingredients:
2 tsp olive oil
3/4 c onion, chopped
3 cloves garlic, minced
48 oz broth, low sodium
15 oz stewed tomatoes (1 can)
2 c mixed vegetables
2 c shredded cabbage
1/4 tsp ground pepper
1 tsp basil or oregano
Directions:
1. In a large pot saute onion and garlic in olive oil (about 2 min)
2. Add broth and rest of ingredients
3. add 1 cup of water if needed
4. Simmer for about 20 minutes
