Marie's Vegan Banana Pecan Bread

The name says it all. and it's yummy. Such a good way to use over-ripe bananas
Ingredients:
1 cup packed brown sugar
1/2 cup canola oil
3 bananas, well mashed
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup chopped pecans, slighly toasted
Directions:
1. Preheat oven to 350°F.
2. Grease and flour a loaf pan.
3. In a medium bowl, mix all the wet ingredients until the sugar is dissolved.
4. In a big bowl, sift all the dry ingredients together.
5. Add the liquid mix to the sifted dry ingredients. Mix well and fold in the chopped pecans.
6. Pour in the loaf pan and bake for 1 hour.
