Ingredients:
1 tablespoon soft butter
110 g sugar
1 egg
1 cup self raising flour
1/2 cup milk
2/3 cup apricot jam
Directions:
1. Cream butter and sugar.
2. Add egg, beat well, stir in flour and milk.
3. Mix well.
4. Grease pudding basin [4 cup capacity].
5. Line thickly with jam.
6. Pour in batter, cover basin with baking paper and foil.
7. Tie with piece of string.
8. Steam for 1 1/2 hours.
9. Stand for 5 minutes before turning out onto serving plate.
