My friend Margaret shared this recipe with me. Thanks Margaret! Sometimes you just need a little ease in your daily operations. This is one of those soups where you can throw it together last minute and voila dinner is ready with some bread and salad on the side. Read more . Also heats up great for leftover lunches for work.
Ingredients:
olive oil- 1 tbp
garlic-couple cloves, coarsely chopped
1 can diced toms
2 cans veggie broth
1/2 bag frozen tortellini
1/2 bag spinach- thawed and squeezed
Directions:
1. Remove Spinach from freezer and place desired amount on a plate to thaw-once thawed squeeze any excess water out
2. Chop garlic
3. Bring canned tomatoes, veggie broth to a boil
4. Add Tortellini
5. Lastly, add spinach
6. Bring to a boil, then reduce to simmer for a few minutes
7. Add Parm. Cheese on top and Enjoy!
