Ingredients:
1 1/2 cups mayonaise
1/2 cup white vinegar
1 1/2 head purple cabbage, sliced
1 yellow onion, sliced
1 yellow bell pepper, sliced
2 cucumbers, peeled, halved and sliced
2 avocados, cut into pieces
3/4 cup italian bread crumbs
3/4 cup (3 ounces) freshly grated parmesan cheese
3/4 teaspoon salt
1 1/2 teaspoons freshly ground pepper
Directions:
1. Mix the mayonaise and vinegar in a bowl and blend well.
2. Chill until ready to serve.
3. Combine the romaine, cabage, onion, bell pepper, cucumbers and avocados in a large bowl.
4. Sprinkle with the bread crumbs, cheese, salt and pepper.
5. Add the mayonaise mixture and toss to coat.
6. Serve immediately.
