Maple Veggie Mashed Potatoes

These mashed potatoes are pumped up with nutritious cauliflower and turnips. Maple syrup adds a hint of sweetness and masks the taste of hidden vegetables. It's surprisingly smooth, creamy, and delicious. I got this recipe from The Complete Idiot's Guide to Clean Eating.
Ingredients:
2 quarts water
1/2 lb turnip, peeled and cut into 1-inch cubes
5 -6 medium yukon gold potatoes, cut into 1-inch cubes
1/4 medium cauliflower head, cut into 1-inch cubes
2 teaspoons olive oil
1 tablespoon maple syrup
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup unsweetened soymilk
Directions:
1. Fill a large saucepan with 2 qt of water. Bring to a boil. Add turnips, reduce heat to medium and cook for 15 minutes. Add potatoes, return to simmer and cook another 5 minutes. Add cauliflower and cook for another 15 minutes or until all vegetables are tender.
2. Drain vegetables and mash. While mashing add olive oil, maple syrup, salt, and pepper.
3. Heat soymilk in microwave until hot and pour into vegetable mixture and continue to mash.
