Maple Syrup Souffle Omelette

A decadent breakfast for two on a chilly morning!
Ingredients:
3 eggs, separated
5 tbsp pure maple syrup
1/2 tsp vanilla
pinch salt
1/4 c slivered almonds
Directions:
1. Preheat the oven to 350F
2. Beat yolks until pale and frothy, then add syrup, vanilla and salt.
3. In another bowl, whip egg whites to stiff peaks.
4. Fold whites into yolk mixture.
5. Heat a large, oven safe pan and spray with cooking spray.
6. Add almonds, then egg mixture.
7. Cook over low heat 8 minutes. Transfer to oven and cook 8 minutes.
8. Serve hot.
