Ingredients:

Directions:

  1. Bake the potatoes at 375* for 1 1/4 hours or until easily pierced with a fork.
  2. Slice in half lengthwise. Scoop out the pulp; leaving a 1/4 inch shell.
  3. Reserve the shells and transfer the pulp to a large bowl.
  4. Mash the pulp and stir in the yogurt, maple syrup, and orange juice.
  5. Spoon the filling into the reserved shells.
  6. Return to the oven and bake for 5 minutes to heat through.
