Maple Pecan Bread Pudding
Ingredients:
4 cups bread, diced
4 eggs, beaten lightly
2 cups milk
1/2 cup sugar
1/2 cup maple syrup
1 tsp vanilla extract
2 tbsp orange juice
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg
1/2 cup pecans
Directions:
1. Preheat oven to 325 degrees
2. Place bread in a baking pan. Bake 12 minutes or until lightly toasted.
3. Place bread in an even layer in 2 1/2 quart baking dish.
4. In a large bowl combine eggs, milk, sugar 1/4 cup syrup, vanilla, orange juice, cinnamon, allspice, nutmeg and pecans. Gently pour mix over bread.
5. Bake uncovered for 40 minutes, until egg is set. Insert a toothpick to check doneness. Toothpick should come out clean.
6. Drizzle remaining syrup over pudding just before serving.
