Maple Muffins

These muffins to me are like eating pancakes and syrup, except they're grab-n-go! I love maple flavor and make these often! :)
Ingredients:
1 1/2 c. all-purpose flour
1/4 c. white sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1/4 c. rolled oats
1 egg, beaten
1/2 c. milk
1/2 c. real maple syrup
1/4 tsp. maple extract
Directions:
1. Preheat oven to 400 degrees F.
2. Grease the cups of a 12-cup muffin pan. (or use paper cup liners)
3. Sift together flour, sugar, baking powder and salt.
4. Cut in shortening until mixture resembles coarse crumbs.
5. Stir in oats.
6. Add egg, milk, syrup and maple extract.
7. Stir only until dry ingredients are moistened.
8. Fill muffin tins 3/4 full.
9. Bake for 18-20 minutes.
10. Remove from oven, and let stand a few minutes before removing muffins from the pan.
11. Enjoy! :)
