Maple-Molasses Barbecue Sauce

Ingredients:
vegetable cooking spray
1/2 cup finely chopped onion
2 cloves garlic, minced
1 tablespoon cornstarch
1/2 cup plus 1 tablespoon maple syrup
1/2 cup water
1/4 cup low-sodium soy sauce
1/4 cup molasses
3 tablespoons cider vinegar
1 teaspoon dried crushed red pepper
1 teaspoon peeled, minced gingerroot
1/4 cup creamy reduced-fat peanut butter
Directions:
1. Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion and garlic; cook, stirring constantly, 3 minutes or until tender.
2. Combine cornstarch and next 7 ingredients; stir well. Add to onion mixture; bring to a boil. Cook 3 minutes, stirring frequently. Add peanut butter; cook, stirring constantly, 2 minutes or until peanut butter melts. Use to baste while cooking and/or to serve with chicken or pork.
