This recipe for duck sausage from Maple Leaf Farms is pretty easy. You can grind up your own duck meat to make the sausage if ground duck meat is not available in your area.
Ingredients:
1 lb duck, ground meat
2 tablespoons onions, finely chopped
1/2 teaspoon ground sage
1/2 teaspoon basil
1/2 teaspoon marjoram
1/2 teaspoon chili powder
1/2 teaspoon thyme
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
Directions:
1. In deep bowl combine all ingredients until well blended. Mixture can be shaped in 2 ways.
2. Shape into 24 large marble-sized balls. Freeze. Bake unthawed, starting out in cold oven, at 325° for 20-25 minutes.
3. OR Shape into 8 1/4 cup patties. Freeze. Bake unthawed, starting out in cold oven, at 325° for 20-25 minutes. Serves 4, 2 patties each.
