Maple Grilled Salmon

Salmon is an excellent source of high-quality protein as well as omega-3 fatty acids that are essential for brain development and heart health.
Ingredients:
3 tablespoons maple syrup
2 tablespoons rice vinegar
2 tablespoons fresh orange juice
4 (6-ounce) salmon fillets (1 inch thick)
cooking spray
1/4 teaspoon salt
Directions:
1. Combine first 3 ingredients in a large heavy-duty zip-top plastic bag; add fish. Seal bag, and marinate in refrigerator 3 hours.
2. Preheat grill or grill pan to medium-high heat.
3. Remove fish from marinade, reserving marinade. Pour marinade into a small saucepan; bring to a boil. Cook until reduced to 2 tablespoons (about 3 minutes).
4. Place fish on grill rack or pan coated with cooking spray; grill 3 to 4 minutes on each side or until desired degree of doneness. Remove fish from grill; sprinkle evenly with salt. Serve fish with sauce.
