MAPLE CORN MUFFINS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.
Ingredients:
2 cups flour
1 cup yellow cornmeal
1 tablespoon baking powder
3/4 teaspoon salt
2 eggs
1/4 cup light brown sugar
1 cup milk
1/3 cup maple syrup
3/4 stick butter melted
Directions:
1. Mix flour, cornmeal, baking powder and salt in a large bowl.
2. Whisk eggs and sugar in another bowl until smooth then add milk and syrup and whisk.
3. Pour over dry ingredients and add 4 tablespoons of the melted butter then fold until moistened.
4. Fill muffin cups and bake 30 minutes at 350 then brush tops with remaining butter.
