I like to change up the add-ins on this recipe. We have used dried fruit bits, mini chocolate chips, or different kinds of nuts. My son likes to add finely diced dried pineapple and then eat them stuffed with ham, and I love them with a mix of nuts and dried cranberries. Read more . They are great for breakfast or any time!
Ingredients:
3 3/4 c. all-purpose flour
1/3 c. sugar
2 t. baking powder
1/2 t. salt
1/2 c. butter or margarine
1 c. your choice: nuts, dried fruit bits, raisins, mini chocolate chips
4 eggs, divided
1 c. evaporated milk
1 1/2 t. vanilla
2 t. milk
Directions:
1. Preheat oven to 400 degrees. Grease two large cookie sheets.
2. In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter with a pastry blender until it resembles coarse crumbs. Stir in 1 cup of Your Choice of add-ins. Set aside.
3. In a small bowl, beat 3 eggs with the evaporated milk and vanilla. Add to the dry ingredients and stir just until a soft dough forms.
4. Turn out onto a floured surface . Knead several times. Pat dough to about a 3/4 inch thickness and cut with a 2 1/2 inch biscuit cutter.
5. Place on prepared pans. Beat the last egg with the 2 T. milk and brush over biscuits before baking.
6. Bake 15 to 17 minuites or until golden brown.
