Spinach and Ricotta filled Manicotti
Ingredients:
119 g manicotti (7 noodles)
250 gram ricotta cheese
1 large egg, raw
1 tbsp plain bread crumbs
5 oz baby spinach
1/2 cup grated parmesan, divided
1/4 cup grated mozzarella
650 g italian sausage pasta sauce (classico)
Directions:
1. steam spinach
2. cook noodles according to directions
3. mix ricotta, 1/4 c. parm, mozza, egg (beaten), bread crumbs and finely chopped cooked spinach.
4. fill noodles
5. line pan with some sauce
6. place noodles in baking dish
7. cover with remaining sauce
8. sprinkle with remaining parm
9. foil
10. bake 350 for 30 minutes
