Ingredients:
21 g. butter, 1 1/2 tbsp.
238 g. chopped onions, 2 cups
135 g. chopped celery, 1 cup
2 cups chopped carrots
167 g. chopped green pepper, 1/2 cup
70 .5-ounce) cans diced tomatoes
51 ounce chopped clams
2 cups chicken broth
1 1/2 tsp. thyme
1/2 tsp. white pepper
1/4 tsp. curry powder
695 g. diced potatoes, 4 cups
Directions:
1. In Dutch oven, brown onions in butter.
2. Add remaining vegetables (except potatoes).
3. Add broth from clams (clams will be added later) and chicken broth. Add spices. Simmer about 15 minutes.
4. Add potatoes. Simmer about 20 minutes.
5. Turn off heat and add clams about 2 minutes before serving, to heat without overcooking.
