Saw some korean Berries at the market in the morning . So thought of baking dis cake . I find the Korean Strawberries very sweet and so are the Thai Mangoes . Makes 8 Slices ......
Ingredients:
for the cake
1 1/2 c white flour , 1 tsp baking pwd and pinch of salt
125 g butter
1 c castor sugar
2 egg whites and yolks
1 tsp vanilla
1/2 c luke warm water and 3 tbsp full cream milk , mixed
4 tbsp fruit punch
filling and topping
1 c whip cream and 5 tsp icing sugar , beaten until whip forms
set 1/4 part aside .
use the remaining 3 / 4 part with the below puree
2 plus 1 medium size thailand mangoes , cubed
4 medium size korean strawberries , sliced
puree
2 medium size thailand mangoes
1/2 c caster sugar
100 g cream cheese
2 tbsp plain yogurt
blend everything and fold in the whip cream .
chill
Directions:
1. Pre heat the oven to 175 deg .
2. Beat the butter and sugar until creamy
3. Add the egg yolks and vanilla
4. Fold in the flour and milk alt. starting and finishing with the flour
5. Fold in the beaten egg whites
6. Pour in a cake pan and bake for 35 mins
7. When cool slit into 2 .
8. Place one layer back on the cake tin
9. Sprinkle the fruit punch on top
10. Spread the whipcream
11. Sprinkle one mango on top
12. Place the other layer of cake on top
13. Pour the puree on top
14. Spread evenly
15. Chill for atleast 4 to 6 hours
