These fresh-flavored kebabs are a great option for entertaining.
Ingredients:
1 1/2 pounds peeled and deveined large shrimp
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 large red bell peppers, cut into 1-inch pieces
2 mangoes, peeled and cut into 1-inch cubes
1 small red onion, cut into 1-inch pieces
cooking spray
2 limes, cut into wedges
Directions:
1. Preheat grill to medium-high heat.
2. Sprinkle shrimp evenly with salt and pepper. Thread shrimp, bell pepper, mango, and onion pieces alternately onto each of 8 (12-inch) skewers. Place skewers on grill rack coated with cooking spray; grill 2 minutes on each side or until shrimp are done. Squeeze juice from lime wedges over kebabs.
