This was labeled a chutney, however since it is not cooked, I consider it a salsa.
Ingredients:
2 cups mangoes, diced
1/4 cup chinese black preserved beans, rinsed
1/4 cup green onion, thinly sliced on the bias
1/4 cup red onion, diced
2 tablespoons ginger, grated
2 jalapeno peppers, red sliced in thin circles no seeds
1 red pepper, diced
1/2 cup oregano, fresh chopped
1 teaspoon lime zest
1 teaspoon orange zest
2 tablespoons lime juice
3 tablespoons orange juice
1/4 cup rice wine vinegar
1 cup olive oil
1 tablespoon cumin seed, toasted
