Summery mango salsa with cucumber for crunch. Great with grilled meats and fish or as a side dish.
Ingredients:
2 cups diced ripe mango
1 peeled, seeded, and diced cucumber
1/2 poblano chili seeded and finely diced
1 jalepeƱo seeded and minced
2 teaspoons minced fresh ginger
1/4 cup chopped fresh cilantro leaves
1 tablespoon packed light brown sugar
1/4 cup fresh squeezed lime juice
salt & fresh ground pepper to taste
Directions:
1. Combine all ingredients in bowl and gently toss to mix
2. Correct seasoning with salt, lime juice or sugar to taste
3. Refirgerate covered until ready to serve
4. Best within a couple hours of making
